This wine was named after an indigenous butterfly of the La Clape peninsula. Grapes were hand-harvested and both the Grenache and Syrah were fermented separately in temperature controlled stainless steel tanks. After fermentation was complete, the two wines were blended and then aged for 10 months in stainless steel tanks, before being bottled.
