This is a staple item for every cook. Used in everything from bases (stocks) to garnish (fried thin slices) and everything in between.

If you can think of it, it is probably made tastier with a little garlic... okay maybe not... a lot of garlic. Sauteed or roasted, garlic makes any savoury dish better.

Roasted garlic is a delightful treat, added to dips or simply spread on crostini. Not only will vampires be kept at bay, but there are health benefits associated with eating garlic. So many international cuisines have garlic as a base for seasoning. Great sauteed and added to soups, casseroles, or practically any savoury dish. Garlic is harvested and dried for use. A head of garlic has anywhere from 6 to 24 cloves. The strong aroma and flavour of garlic blends well with so many foods. The two most common varieties are Softneck and Hardneck.

In addition to its signature flavor and enticing aroma, garlic is known for a wide range of beneficial health effects.


  • After working with garlic, rub your hands on stainless steel for 30 seconds before washing them. It will remove the odour.

Handling & Storage:

  • Choose bulbs that are dry, plump and firm to the touch. Heavy, hard bulbs are the most fresh. Avoid bulbs that have sprouted or have shriveled and soft spots.
  • If you buy peeled garlic, ensure that the cloves are an unblemished ivory-white, with no evidence of mold or stickiness.
  • Fresh garlic is perishable — but don’t refrigerate it unless it’s already peeled or cut. Whole heads of garlic keep best in a cool, dark, well-ventilated place (45–50°F / 7–10°C). Store garlic away from other foods that may pick up its taste. Peel the papery husk from each clove and cut away any damage or bruises before using. Discard garlic that has sprouted, shows signs of moisture, rot, or mildew, or smells bad.
  • If you're storing cut or peeled garlic, refrigerate it in a container with a tight-fitting lid; otherwise, garlic odors will permeate everything else in your refrigerator.
